Our Blue Guest Room Remodel & Tips On How To Remodel Your Guest Bedroom

If you're looking for an easy and affordable way to spruce up your home, a guest bedroom remodel is a great place to start. Whether you're looking to makeover your guest bedroom to create a cozy and inviting space for your visitors, or to just refresh the look of the room, a simple remodel can help transform the look and feel of your home. For our remodel we went with a beautiful blue/green tone with some creams and touches of wood and gold. This gave a calming effect but also tied the room into the rest of our home well.

Next, invest in a quality bed and mattress. Your guests should not have to sleep on an uncomfortable bed. Make sure the bed and mattress fit the size of the room and can be used for multiple guests if needed. In addition, incorporate plenty of storage options. If your guests are staying for an extended period, they will need to store their belongings. You can put in drawers, shelves, or a wardrobe to provide them with enough space. We luckily have walk-in closets in all our rooms, but we still decided to add nightstands with drawers and a vintage armoire for both the right look and for their additional drawer space.

Also, consider adding a sitting area if you have the space for your guest bedroom decor. This will give your guests a nice place to relax and read in the mornings or evenings, while the rest of the house may be slowly rising. Also, a sitting area is always the perfect idea for some much-needed quiet time. Add special touches like fresh flowers or a basket of snacks to make the guests feel right at home and table books for them to read but also double as stylish decor.

I found our armoire for this room on Facebook marketplace and all it needed was little Bar-Keepers scrub on the handles and Old English on the wood and it looked brand new. I also found our nightstands/bedside tables on the Facebook marketplace. I decided to paint those to add to the color scheme but loved the similar design to the armoire.

What I did In Our Guest Bedroom Remodel:

I started this project for the One Room Challenge and re-did another upstairs bedroom for when guests come to visit from of town. I knew I wanted to make this room a traditional calming blue color and quickly found this gorgeous Sanna Light Blue wallpaper from Sandberg and fell in love. I added in Ballard Design pillows and the rest took off from there.

I wanted this room to differentiate from our other guest room we did with full wallpaper, so I decided to do fun molding and paint for the bottom half of the wall. Novo has some amazing pre-made molding designs that made it so easy to work with! This was our first time installing any molding and doing woodwork ourselves around the house, but with a few quick purchases like a Mitre saw and nail gun, the project went so well. I highly recommend looking at their options to give your room that creative custom architectural look without breaking the bank. They also have their brand at Home Depot as well.

After adding all the trim and molding next we needed to paint! When I first painted the Kelly Moore Ocean Cruise color I wasn't sure it would match with the wallpaper but once I got both coats and put the room together I knew I made the perfect choice.

Two things I decided I wanted to DIY myself to cut down on costs were the lampshade for the table lamp and the pictures above the bed. I ordered fabric from Ballard Designs to match the pillows and designed the look of the lampshades myself. I have more videos on how I did this on my Instagram under stories "guest bedroom 2". Then I worked on the frames above the bed. I wanted a similar style to a framed picture I loved that Ballard Designs has. However, the cost of the frames was a pretty penny and I didn't want to spend that on a guest bedroom. So, I tried recreating the look myself and I found frames from Target and Medallions on Etsy, then painted the cardboard on the frame the same "ocean cruise" color from Kelly Moore. I also added a small layer of rub & buff antique gold around the inside of the matt to give a vintage and more detailed look. I love how it all turned out and that it was a fraction of the cost and a rewarding DIY project at the same time!

1. Layers of Hummus on a beautiful serving plate

2. Layer on your toppings. Like I said above make this all your own! If you prefer another topping then add that in or substitute it out. Drizzle olive oil after adding all toppings.

3. Arrange Pita Chips and Cucumbers around the dip for easy scooping and beautiful presentation.

4. I also added small bowls of 2 kinds of olives for those that don't want dip to have another option and add a finishing touch.

5. Refrigerate until you are ready to serve!

Ingredients

3 oz vodka

3 oz simple syrup

3 oz freshly squeezed lemon juice

Extra granulated sugar for rim garnish

Instructions

1. Rim your martini or cocktail glass. Take a lemon wedge and run around the edge of your glass to lightly dampen it. Then flip upside down and press into a plate of granulated superfine sugar.

1-1/2 cups milk

Icing:

2 tablespoons lemon juice

3/4 cups powder sugar

Directions:

  1. Preheat oven to 350 degrees and grease 2 loaf pans

  2. Combine sugar, melted butter, eggs, vanilla and lemon zest.

  3. Stir in Poppy Seeds

  4. Mix in Flour, Baking Powder and Salt until well combined.

  5. Scrape down sides and add in Milk until mixed thoroughly.

  6. Divide batter evenly between prepared pans and bake for 45 min.

  7. Cool loaves for 10 min and prepare icing.

  8. Blend all icing ingredients and pour over warm loaves!

Whether you’re an experienced mixologist, or you just love playing bartender at home, you’re sure to find at least one perfect recipe for your next Summer gathering. So grab your tequila, mixers, and garnishes, and let’s get shaking!

When it comes to making delicious tequila cocktails, it’s important to choose the right kind of tequila. When looking for a hotel for our trip to Cambridge we found the perfect Kimpton Marlowe Hotel. With the most stunning views, spacious suites and an extremely delicious restaurant it's a truly great pick for exploring Cambridge and being an easy walk away from Downtown Boston as well.

The hotel is newly renovated with the usual great Kimpton amenities like nightly wine hour, a spacious hotel gym, morning coffee & tea bar, pet friendly, and so much more. Cafe Luna - This is a must-stop for breakfast when in Cambridge. Delicious food and worth the wait! Scott had the roasted street corn omelet and I opted for the lemon ricotta pancakes. Both are popular dishes and both are delicious! If you are looking for savory or sweet this is the spot!

Tatte Bakery & Cafe - With locations all over Boston and Cambridge you won't be able to walk down the street and not see a Tatte Bakery... and for good reason too! These spots are as equally delicious as they are adorable. If you are looking for a quick bite or an afternoon coffee this is where you need to go. Don't forget to grab the pistachio croissant.. you'll thank me later!

This can help to highlight the guest of honor and feel very personal in a lovely way. To easily do this just buy the amount of small brie rounds needed, I found these at Trader Joe's. Then, I cut the word MOM out into each round. I first traced it out and then made a larger hole so the pomegranate seeds can easily fit in. If you don't do this it may cause the cheese to split. Place your seeds in the cutout letters and add them to your board. This gives a uniqueness to your Charcuterie board but also is using 3-dimensional characters that are so beautiful and fun! Chicken Piccata is a favorite dish of mine that combines butter, capers, and very subtle hints of lemon that creates a flavorful and acidic sauce, which pairs perfectly with a creamy white wine such as Chardonnay. For a classic pairing, I recommend enjoying a glass of the J. Lohr Estates Riverstone Chardonnay with this meal. With its light acidity and hints of lemon, you'll find that this wine perfectly complements the acidic and buttery sauce of the Chicken Piccata. As you will see in the recipe below, I don't add extra lemon juice or zest like many other traditional Chicken Piccata dishes because of the selected wine pairing. With this wine having a hint of ripe Meyer lemon in its flavor profile, I didn't want an overly lemony sauce to pair with it. If opting to exclude the extra lemon juice, you can substitute with some vegetable broth. This recipe, just like the wine, can be very versatile to suit your taste buds.

J. Lohr Vineyards & Wines produces some of the world's most popular and well-regarded Chardonnays, which they call REAL Chardonnay. What is REAL Chardonnay? It’s when the wine comes from perfectly sited, cool-climate, and sustainably farmed vineyards in Monterey's Arroyo Seco AVA. It's also using 10 different Chardonnay clones and aging using only the finest oak barrels. The range of flavors, from light and crisp to full-bodied and complex, makes each of J. Lohr's three Chardonnays the perfect accompaniment to this classic Italian dish.

The J. Lohr Estates Riverstone Chardonnay has aromas of orange, white peach, a little pear, and sweet oak with baking spices on the long finish, giving it a delicious flavor. The wine is medium-bodied, with a smooth and creamy finish. These flavors work perfectly with the lemon and caper sauce in Chicken Piccata, as the richness of the wine helps to balance the acidic nature of the sauce. The fruit flavors of the wine help to enhance the delicate flavors of the chicken. The medium body of the wine also helps to bring out the subtle flavors of the dish without overpowering it.

My Chicken Piccata Recipe

Serves 6

Ingredients

3 large chicken breasts, cut in half and pounded

Salt & Pepper to taste

1/2 teaspoon garlic powder

Flour (for dredging)

6 tablespoons butter, divided

2 tablespoons olive oil

1 shallot, diced

1/4 cup chicken broth 

Splash of white wine

1 lemon, thinly sliced

1 tablespoon brined capers, drained

1/2 cup heavy whipping cream

Freshly grated parmesan cheese

 

Instructions

1. Slice chicken breasts in half to make 6 smaller chicken pieces. Pound until thin. Season chicken generously with salt

and pepper. Place flour on a plate, add garlic powder and mix. Coat the chicken in your flour mixture.

2. Add 2 tablespoons of butter and olive oil to a skillet over medium-high heat.

3. Once the pan is hot, cook the chicken pieces for about 7-8 minutes per side or until golden.

4. Remove the chicken from the skillet and set aside on a plate layered with paper towels.

5. Take the pan and add a splash of white wine to help pick up the brown bits and add flavor. Once brown bits come up, add 2 tablespoons of butter and the shallots. Let shallots cook until they are transparent.

6. Add the chicken broth, the last 2 tablespoons of butter, and capers to the skillet. Stir until the butter is melted and turn off the heat. Stir in the cream. (If you want to make this recipe without cream, increase the chicken broth to 3/4 cup.) Mix and add lemon slices. 

7. Add the chicken to the pan and garnish with parmesan cheese.

1 sheet of frozen puff pastry

2-3 pears, thinly sliced

1 tablespoon sugar or brown sugar

1 tablespoons cane sugar

Directions:

  1. Preheat oven to 375 and let puff pastry start to defrost for 5-10 minutes while thinly slicing pears.

  4. Layer sliced pears onto puff pastry and brush whisked eggs over the pear and pastry.

  5. Sprinkle sugar mixture all over and place pastries on parchment paper lined cookie sheet.

  6. Place in oven for 15-17 minutes or until edges are golden brown.

  7. Remove once edges are browned and place on cooling rack until ready to serve.

  8. You can serve warm and sprinkle with powdered sugar and/or top with vanilla ice cream, honey, or caramel for a delicious treat.

Serve it up "as is", or with a great sauce such as a yummy spicy mayo or creamy sauce. This one-pan dinner is a great way to get a healthy and delicious meal on the table in no time! Another way to make it your own is changing out the veggies to your family's favorites!

Ingredients

4 chorizo links

4 red potatoes

1 red onion

4 cups broccoli

16 oz mushrooms

1/3 cup olive oil

2 tablespoons Homemade Ranch Seasoning

Spicy Mayo

Directions

1. Preheat oven to 375

2. Lay chorizo links in 360 cookware bake & roast pan. Place in oven while you prep veggies, about 15 minutes.

3. Prep veggies by cutting them into bite sizes and placing them in a bowl to combine. Once it's all cut and ready add olive oil and seasoning and toss to fully coat.

4. Take out the pan with the chorizo and remove the chorizo to a clean plate. Layer veggie mixture into pan and place chorizo on top.

5. Return to oven and continue to bake for another 30-45 minutes or until a fork easily pokes into potatoes

6. Slice chorizo and plate with veggies and spicy mayo (you can omit if you don't prefer sauce)

How to Make Colorful Deviled Eggs

Pink deviled eggs are a great way to add a personal pop of color to any gathering! Making them is surprisingly easy and does not take too much time.

To get started, you'll need twelve large eggs. Boil them until they are hard-boiled, then peel the shells off. In a medium-sized bowl, mix 1/3 cup mayonnaise, 1 tablespoon chopped pickles, 1 tablespoon pickle juice, 1/2 teaspoon paprika, and a pinch of salt and pepper. Once the ingredients are combined, add the egg yolks and mash them with a fork or potato masher until the mixture is creamy.

Next, you'll need to dye the egg whites. To make pink deviled eggs, use beet juice and water. Place the egg whites in the dye for one minute or longer, depending on how deep of a pink you are trying to achieve. Fill the dyed egg whites with the yolk mixture.

For the final touch, you can add small flowers or more paprika to the tops of the eggs. Serve the pink deviled eggs immediately or store them in the fridge for later. Enjoy!

What are Other Ways to Hard Boiled Eggs?

Using my 360 2 Quart Saucepan to make my hard-boiled eggs without water. First you will wet a paper towel and your eggs. Fold the paper towel to fit into the saucepan, wet it with water, and place it in the pot. Make sure the towel isn't sitting in a pool of water but that all the water is held in the towel. Carefully place the eggs in a single layer on top of the wet towel. Cover the pot and heat it over medium heat until steam just begins to escape from under the lid, about 3 minutes. Spin the lid to engage the vapor seal then immediately reduce the heat to low. The cooking time will vary depending on the desired doneness of the eggs. For soft-cooked eggs, cook 5 to 6 minutes; for medium-cooked eggs, cook 7 to 8 minutes; and for hard-cooked eggs, cook 13 to 15 minutes.

How to Dye the Eggs

To make your own Pink Deviled Eggs, gather the supplies: hard-boiled eggs, food coloring, water, a shallow bowl, and a slotted spoon. Then, fill the bowl with equal parts water and beet juice or food coloring. Submerge the hard-boiled eggs in the colored water and let them sit for about 1 minute or more depending on the depth of color you are looking for. Carefully remove the eggs from the liquid and pat them dry with a paper towel. Now you have festive Pink Deviled Eggs!

(Serving Size 12)

12 large eggs

1/3 cup mayonnaise

1 tbsp chopped pickles

1/2 tsp Salt

INSTRUCTIONS

  1. Hard boil the eggs first. Fold the paper towel to fit into the 2 Quart Saucepan.

  2. Wet the paper towel with water and place it in the pot. (The towel shouldn’t be sitting in a pool of water. All the water should be held in the towel.) Place the eggs in a single layer on top of the wet towel.

  3. Cover the pot and heat over medium heat until steam just begins to escape from under the lid, about 3 minutes.

  4. Spin the lid to engage the vapor seal then immediately reduce the heat to low for 15 minutes.

  5. Remove from heat and put eggs in an ice-cold bath. This makes it easier to peel them.

  6. Once you peel the shell of the egg cut it in half lengthwise and remove egg yolk in a bowl. Put egg whites in another bowl and cover with 1 cup beet juice and 1 cup water until completely submerged. Leave for 1 minute and rinse with water and lay on a paper towel to dry. You can add more beet juice or leave it for longer to achieve a deeper pink.

  7. In the egg yolk bowl mush eggs and add in pickle juice, chopped pickles, salt, pepper and paprika. Once mixed add to a piping bag and fill with egg yolks.

Adjustments you can make for this meal would be adding in dijon mustard in exchange for pickles if you want less of a pickled flavor. If you like a pickled flavor and are out of juice you can additionally use apple cider vinegar. Seasoning can also be changed for your taste buds as well as mayo ratio. I always encourage making all my recipes into your own to fit your diets and taste buds. Deviled eggs are a classic appetizer perfect for any occasion. My Table Decor With William Sonoma

This year I found the most beautiful place setting and decor from William Sonoma that I fell in love with, the Famille Rose. The patterned pieces look amazing with so many colors but I opted to stay with the beautiful pink and green elements. Adding in a neutral green tablecloth and napkins gave a soft touch of color to go with the pink chargers and plates. For the side table, I added a green tablecloth and more gorgeous pieces from the William Sonoma collection that highlights their fun desserts for Easter. The Champagne bucket is also a perfect touch for brunch with champagne or rose for an Easter dinner. I filled ours with Justin rosΓ© and two bottles of Justin red (Right Angle and Cabernet Sauvignon) on the table to give our guests options to pair with their delicious ham dinner from William Sonoma.

The final touches I added were the cutest little moss bunnies on the table and the sideboard. They make the best addition to any Easter and Spring table. I also went with tulips for the ultimate Spring floral addition. I found pink and white tulips at our local Trader Joe's and added them to vases for a simple centerpiece our guests would love!

If you’re looking for a unique, historic, and lively vacation spot, look no further than New Orleans, Louisiana. Also known as β€œNOLA”, this charming city offers a unique and vibrant culture, delicious Creole and Cajun cuisine, and plenty of activities to keep you entertained for days. With the number of attractions and activities in the city, three days in NOLA is the perfect amount of time to get a taste of this magical city. In this blog post, I’ll be sharing the best activities and attractions to check out during your three-day adventure in NOLA.

Spending 3 days in NOLA is an absolute must for any traveler looking to explore the city's unique culture and vibrant atmosphere. A great way to start your NOLA adventure is to admire the architecture of the iconic St. Louis Cathedral, in the heart of the French Quarter in the famous Jackson Square. This 18th-century structure is a symbol of the city’s French and Spanish colonial roots and a must-see for anyone visiting the city. This beautiful and historic church is one of the most recognizable landmarks in the city. Built-in the late 18th century, it is the oldest cathedral in the United States and the seat of the Archdiocese of New Orleans. Inside the Cathedral, visitors will find a beautiful sanctuary, ornate chapels, and a museum dedicated to the history of the church. There is a free guided tour offered every day, as well as daily mass services. It's no wonder that the Saint Louis Cathedral and Jackson Square is a major tourist attraction!

Next, head to the Cabildo and Presbytere, two of the most famous buildings in the French Quarter. Both buildings were constructed in the late 1700s and are now home to the Louisiana State Museum and the Historic New Orleans Collection. After dinner, visit a jazz club and experience some of the best jazz music in the country. We went to The Jazz Playhouse after dinner on our first night and enjoyed a show and a cocktail. It was so fun and a must-do! Don't forget to visit some of the other iconic streets, such as Canal Street and Royal Street, and take a riverboat cruise to view the skyline from the water.

Ride the St. Charles Streetcar

A trip to New Orleans wouldn't be complete without hopping aboard the historic St. Charles Streetcar line. This century-old streetcar has been operating continuously since 1835 and is the oldest streetcar in the world. As you travel along the streetcar line, you can enjoy the unique atmosphere and view stunning architecture, beautiful homes in all the neighborhoods, and popular sites such as the Audubon Zoo and the French Quarter.

Live jazz musicians often perform at the streetcar stops, adding to the vibrant atmosphere of the ride. Whether you're a local or a tourist, the St. Charles Streetcar is a great way to explore the city and take in the sights. Make sure to take a break and grab a bite to eat or a refreshing drink at one of the many restaurants, cafes, and bars along the route. With three days in New Orleans, you can easily make the most of your time by hopping on the St. Charles Streetcar and experiencing the city in a unique and memorable way.

While on the street car stop off at the Garden District with one-of-a-kind neighborhoods, where you can marvel at the grandiose and historic homes from the 19th century. Take a guided tour to learn about the history of the area and see some of the most beautiful Victorian mansions in the country.

Wander the French Quarter

Exploring the charming streets of the French Quarter in New Orleans is a must-do for any traveler. From the vibrant architecture to the quaint courtyards, there is so much to take in and admire. For an unforgettable experience, take a horse-drawn carriage ride around the neighborhood and take in all of the sights and sounds. Spend some time shopping at the open-air French Market where you can find unique art, trinkets, and souvenirs to take home. My favorite shops were the antique shops with beautiful chandeliers and tons of unique pieces! You can also take a look at the many murals and sculptures that adorn the walls and alleys of the French Quarter.

No trip to New Orleans is complete without trying some authentic Creole cuisine. There are many restaurants in the French Quarter that offer amazing food from po’boys to gumbo. One of the best places to spend an afternoon in New Orleans is Magazine Street. This iconic New Orleans neighborhood offers six miles of unique shopping, dining, and entertainment. No matter what you’re looking for, you’re sure to find it on Magazine Street. From vintage boutiques and art galleries to cozy cafes and hip bars, the neighborhood has something for everyone. Enjoy a leisurely stroll down the street, and take in all the sights, sounds, and smells of the Big Easy. Whether you’re looking for souvenirs, great food, or a lively atmosphere, you’re sure to find it in this iconic neighborhood.

Where to Stay In New Orleans

If you’re looking to explore the vibrant city of New Orleans, there are plenty of great places to stay and things to do. The French Quarter is the original neighborhood of the city and is filled with historic buildings, quaint cafes, and some of the best restaurants and nightlife. For a more relaxed experience, the Marigny neighborhood provides a residential area with plenty of activities to keep you busy. The Garden District is known for its stately mansions and lush gardens, making it a great area for an upscale experience. Lastly, the Warehouse District is the city’s arts and entertainment hub and a great place to stay if you want to be close to the action.

We stayed at the Kimpton Hotel Fontenot, which was a chic retreat in NOLA's Central Business District. Just like all Kimpton hotels we have stayed at it was adorable, with the perfect modern decor representative of the city's history. The staff was exceptionally tentative and the restaurants on site had delicious food! Highly recommend this area when in NOLA to stay far enough away from the noise of Bourbon street, but still an easy 15-minute walk to it and the French Quarter. Everything was walkable and you didn't deal with the noise when trying to get a goodnights rest.

Where we ate

No trip to New Orleans is complete without trying some of the most iconic dishes in the city. When we visited NOLA, we made sure to visit Cafe du Monde to try their iconic beignets and a cup of cafe au lait. The atmosphere was great and a perfect way to start the day.

We stayed at The Kimpton Hotel Fontenot and it had a delicious quick-service coffee shop Gospel coffee and boozy treats and sit-down restaurant The PeacockRoom. We ate at both and loved the food, service and convenience of being in our hotel. At The PeacockRoom we ordered the pimento cheese dip and croque madame.

For dinner, we decided to try Meril, which was located on Girod Street. It was highly recommended by my friend for delicious desserts, especially the bread pudding. We were not disappointed! The food was very good, as were the desserts. Portions were a little smaller than most places, so be advised when ordering. We ordered the pinapple upside down cornbread, mexican street corn, korean beef short ribs, and cinnamon toast bread pudding.

After dinner, make a stop at the Carousel Bar for a drink or two. This is a must-experience when down in the French Quarter frequenting Bourbon Street and the French Market. It's a small bar, in an amazing hotel, but just wait for an open seat and sit down for a cocktail before or after dinner! We had the FRENCH 007 and Knob Creek bourbon.

One of our favorite meals was probably at Chemin a la Mer. Located inside the Four Seasons New Orleans. This location gave a beautiful view of the Mississippi river and had the most delicious French-inspired food. They are open all day and next to the Vue Orleans so lunch was a perfect time to visit and then pop over to see the Vue. We ordered the seasonal beet salad, the grackle burger and lamb shoulder roulade.

When visiting New Orleans, no trip is complete without experiencing the classic local treat, the beignet (with extra powdered sugar)! Two iconic locations make it easy to satisfy that craving: CafΓ© Du Monde and CafΓ© Beignet.

At CafΓ© Du Monde, visitors can experience the classic beignet with a cup of their world-famous chicory coffee. This cafΓ© has been around since 1862 and is a local favorite. Plus, the outdoor seating is the ideal spot for people-watching and soaking up the culture of the city. CafΓ© Beignet also offers a wide variety of beignets in flavors such as blueberry, strawberry, and more. Plus, visitors can enjoy their beignets with a hot mug of coffee or a cold glass of lemonade. No matter where you go, beignets are the perfect accompaniment to your New Orleans experience. It was fun to try them both and compare them while also experiencing the classic flavor and culture of the city in a bite with beignets in both of these two iconic locations!

INGREDIENTS

(Serving Size 8)

6 tablespoons butter

16 oz baby bella mushrooms

2 cloves minced garlic

3 finely chopped shallots

2 cups arborio rice

1/2 cup white wine

6 cups vegetable broth

1 1/2 cups frozen or fresh peas

2 teaspoons sea salt

1 cup grated parmesan cheese

1 teaspoon thyme

1 teaspoon rosemary

INSTRUCTIONS

1. To begin, heat the butter in a large pan ( I am using 3.5 Quart SautΓ© Pan with Short Handles

from 360cookware) over medium heat. Once melted, add the mushrooms and cook for about 3 minutes until softened. Then, add the peas and cook for an additional 5 minutes until well mixed and the mushrooms have shrunk in size. Remove the mixture to a clean plate and set aside.

2. Return the pan to the stove and add additional butter and shallots. Sautee until the shallots are transparent. Then, add the rice and cook for 1 minute. After that, reduce heat to medium-low heat and add the white wine and stir to scrape up any browned bits from the bottom of the pan. Slowly add in the stock, one cup at a time, stirring frequently.

3. When the rice is almost cooked through, stir in the peas and mushroom mixture for an additional 2 minutes. Taste and season with salt, thyme, and rosemary.

4. Finally, stir in the butter and Parmesan cheese until fully melted. Serve the risotto with a sprinkle of Parmesan cheese and fresh herbs. Enjoy!

INGREDIENTS

Crust:

12 oz graham crackers

1 cup pecans

1 cup melted butter

Filling:

3 - 8 oz cream cheese ( room temperature )

1 stick salted butter

1/2 cup brown sugar

1/2 cup granulated sugar

1/4 teaspoons sea salt

3 eggs

1/2 cup heavy cream

1 tsp vanilla extract

3 tablespoons lemon zest

Glaze -

1 cup granulated sugar

2 eggs

1/4 cup fresh lemon juice

3 tablespoons lemon zest

6 tablespoons butter

INSTRUCTIONS

  1. Preheat oven to 375. Spray cheesecake pan with olive oil spray and wrap around the outside with foil.

  2. Make Crust by adding pecans & graham cracker to blender and processing until fine. Add in melted butter and blend again.

  3. Press crust mixture into bottom of pan until even all the way around. I use a flat bottom cup or a metal spoon to help.

  4. Bake in oven for 13-15 minutes. Once done remove and let cool before adding filling.

  5. Reduce oven temperature to 325 degrees.

  6. Make filling. Mix together softened cream cheese and butter with both sugars and salt until well combined.

  7. Add in eggs. One at a time. Making sure they are fully incorporated each time.

  8. Next add heavy cream, vanilla and lemon zest! Once well mixed add into cooled cheesecake pan.

  9. You will then add this onto a tray with a lip. I use this one -here-. (Code Amanda20 for 20% off any order at 360cookware.com) Place on oven rack and add in warm water until halfway full and push back rack and start timer.

  10. Cook the cheesecake for 1 hour. The center will still be a little jiggly, but side will be set. After baked for 1 hour you will turn oven off the oven and leave the cheesecake in the oven for an additional hour.

  11. Once baked for an hour and let sit for an hour in the oven, you can remove from the oven. Wrap cheesecake and let sit in your refrigerator overnight. Up to 24 hours before serving or adding glaze.

GLAZE INSTRUCTIONS

After Cheesecake has cooled overnight you will want to get the glaze ready for the finishing touch! You can add this onto each piece as you serve as you go just in case someone doesn’t want it, but I always add ahead of time, because it's so good everyone will!!

  1. Take a small saucepan over low/medium heat and whisk eggs, sugar, lemon peel & lemon juice.

  2. Add butter and continue whisking constantly. Mix until thickened. (It will stick the back of a wooden spoon)

  3. Remove from pan into a glass bowl and let cool for 15 min.

  4. Place in refrigerator until completely cooled. Then place on top of cheesecake and serve!
