Banana Bread Recipe

I am so big on not wasting food! I am always making sure we either eat everything before is spoils or before it does I love finding new and creative ways to use that food to make something new. Bananas are a perfect example of this. Once our bananas start to brown and get too soft to eat I either cut them in half and freeze for smoothies/protein shakes or I mash them up and make banana bread. Even if we aren’t going to eat the bread right away I make it, wrap it up, and freeze it for another time. Its perfect to have on hand if I need an extra bread for a brunch or to take on a road trip, or if I run out of things for the hubby to have on hand for weekday breakfasts. Here’s my favorite recipe:

Ingredients:

3 mashed bananas

1/2 cup melted butter

3/4 cup brown sugar

2 eggs

2 cups all-purpose flour

3 tsp baking powder

1/4 tsp salt



Directions:

  1. Preheat oven to 350 degrees

  2. Grease a 9X5 inch loaf pan

  3. Thinly slice off each side of one banana to place onto top of bread for a beautiful design like in photos (if desired)

  4. mash bananas and add in eggs, brown sugar, melted butter. Mix well.

  5. Stir in flour, baking powder and salt.

  6. Pour batter into prepared loaf pan.

  7. Gently lay the slices of banana on top for desired look.

  8. Bake for 60 min on middle rack until a knife comes out clean.

  9. Let cool for 5-10 min and turn over.

  10. Enjoy!
