Once the vegetables have softened, add in some canned tomatoes, 5 oz of chopped pancetta, cannellini beans and season with your favorite Italian seasoning blend. I personally use my own italian seasoning, which I make monthly to just to have on hand. Pour in enough broth or stock to cover the vegetables and bring to a boil. Once boiling, reduce the heat and let simmer for 15-20 minutes.

Next, add in some cooked pasta and beans, such as cannellini beans, and simmer for an additional 10 minutes. Once the pasta is cooked, taste and adjust seasoning as desired. Let ingredients come together for an additional 10-20 minutes or until the spinach has changed color to a dark leafy green.

Serve the soup hot, with a sprinkle of freshly grated Parmesan cheese and slices of crusty bread. Enjoy! This flavorful and comforting soup will become a staple in your house. Remember, this minestrone soup is easy to make and is sure to please the entire family. Enjoy!
