Ingredients
1 head cauliflower
1 tsp sea salt
1 tsp cracked pepper
1 tablespoon all-purpose flour
4 tablespoons salted butter
1 large yellow onion
4 cloves garlic, minced
1 teaspoon parsley
1/2 teaspoon thyme
1/4 tsp chili powder
4 oz cheddar cheese, grated
4 cups vegetable broth
1 cup heavy cream

Instructions
1. In a large Soup Pot add butter and melt over medium heat. Add in garlic and saute until fragrant around 30 seconds. Add in diced onion and cut up cauliflower. Let cook until softened. Season with salt, pepper, parsley, thyme, all-purpose flour and chili powder
2. Pour in vegetable broth and let come to a simmer, cover and let cook for 15-20 minutes or until cauliflower is completely softened.
3. Carefully pour into a blender and pulse until completely creamed. (For a more chunky cauliflower cheese soup leave half of the soup in the pot and only blend half.)
