Ingredients

10 -12 cups spinach

2 small apples

4 oz crumbled goat cheese

2 cups pistachios

Dressing:

1 tablespoon butter

2 shallots, diced

2 tablespoons honey

2 tablespoons apple cider vinegar

1/3 cup olive oil

sea salt & fresh ground pepper

Instructions

  1. Make The Dressing. Add butter to pan, a pinch of sea salt and sauté your diced shallot until caramelized. Add in honey, dijon mustard and apple cider vinegar. Let simmer for 30 seconds while ingredients marry together. Turn off oven and add in olive oil, whisky as you do. Add in sea salt and pepper to taste. Pour into a container to serve dressing on the side of the salad. You want the dressing warm not hot where it will wilt the spinach. So let cool slightly while assembling the salad.

  2. Assemble the salad. Add together in a large bowl spinach, sliced apples, goat cheese and pistachios. I like to add half of the apples goat cheese and pistachios, then add the other half after plating. For this salad you will want to add dressing right before serving so you can do so not and then plate or you can serve small dressings to each of your guests depending on how you are serving. After adding dressing add to plate and add additional toppings. Serve and enjoy!

9 oz bag of broccoli slaw

2 cups shredded Brussels sprouts

4 chicken breasts, chopped

1 cup cherry tomatoes, cut

1 tomato sliced

1/2 cup feta cheese

Toast chopped pistachios in a pan over the stove until slightly toasty and set aside. Cube all watermelon, honeydew and cantelope. Let burrata come to room temperature.

1/4 teaspoon paprika

1/4 teaspoon garlic powder

7 oz. Arugula Lettuce

3 cups corn

2 cups cucumber

1 tbsp olive oil

1 bunch of fresh cilantro

1/2 large red onion

1. Season chicken with paprika, garlic powder and salt & pepper to taste. Grill on bbq or on the stovetop. 6 minutes on each side or until fully cooked. Set aside to rest for 10 min while preparing salad. Slice thinly once it has rested.

2. Prepare dressing by mixing together all ingredients above until fully blended; mayonnaise, lime juice, cumin, paprika, chili powder and salt & pepper to taste.

3. Mix together street corn. Add corn to pan used to cook chicken toast lightly on the outside to give a grilled flavor or if BBQing add to grill with chicken. Slice cucumbers in half and thinly slice. Same with red onion. Add cucumber, red onion and corn to bowl and mix together with olive oil 1 tsp fresh chopped cilantro 1/3 cup of shredded cheese. Mix together until fully saturated and blended well.

4. Assemble salad. Lay down lettuce, add sliced grilled chicken, slices of avocado and Mexican street corn mix. Drizzle dressing on top and sprinkle additional cilantro on top. Serve immediately and enjoy!

How to Make the Perfect Pear and Pomegranate Arugula Salad

Looking for a unique and flavorful salad to serve at your next dinner party? Look no further than this Pear and Pomegranate Arugula Salad! The flavors come together so nicely with this salad from the sweetness of the pears and pomegranate seeds, complemented by the peppery arugula, and the bitterness of the feta cheese crumbles. It's also a beautiful looking dish to bring to any gathering.

You can pair this with chicken for a wonderfully balanced combination, and it typically will serve 5-6 people if used as a main dish. Of course, if served as a side salad in addition to your delicious breakfast, brunch, lunch, or dinner you can serve as many people as you want. It's honestly good enough to enjoy any time of the day.

Ingredients

10 ounces of arugula salad

1/2 cup Pomegranate seeds

1/2 cup feta cheese ( goat cheese is also a delicious addition)

1 thinly sliced red pear

1 thinly sliced green pear

Ingredients For Dressing

1/2 cup pomegranate seeds

1/4 balsamic vinegar

1/2 cup raw honey

1/2 cup extra virgin olive oil

1/4 tsp salt

1/4 tsp pepper

Instructions

1. Rinse and pat dry all fruit and vegetables.

2. Add all dressing ingredients into blender and blend until smooth. I use fresh pomegranate seeds but pom pomegranates arils are great when in a hurry! This dressing can be premade in an airtight container in refrigerator up to 2 days ahead of time.

3. Now it's time to assemble the pear and pomegranate arugula salad. Add half the pomegranates seeds, half feta cheese, and half of both thinly sliced pears. Pour dressing over top and mix up! Then layer remainder of pears on top. Sprinkle feta cheese and pomegranates on top and serve!

Shaved Brussel Sprout Salad with Apples, Goat Cheese & Candied Pecans

The weather is warming up and with it those big, heavy, filling cold weather dishes may be slowly transitioning into !ighter and healthier colorful plates. This delicious salad is one of my favorites to enjoy anytime of year but especially in the Spring and Summer. I love to pair it with salmon or have it as a nice side dish for those Summer cookouts that are sure to come! This recipe will provide you with everything you need to make the dressing from scratch and to add in the candied pecans that are so addicting on any meal!

Ingredients:

10 -12 cups shaved Brussel sprouts

1/2 cup fresh strawberries

1/4 balsamic vinegar

1/4 raw honey

1/2 cup olive oil

1/4 tsp salt

1/4 tsp pepper

1 large apple ( I like the pink lady)

4 oz crumbled goat cheese

2 cups pecans

1/4 cup maple syrup

2 tbsp brown sugar

Directions:

  1. Make Candied Pecans so they can cool while you prepare rest of salad.

    1. line baking sheet, I use my Jelly Roll Pan from 360 cookware -here-, with parchment paper and set aside.

    2. In a pan, I use my 360 cookware 1 quart sauce pan -here-, melt together maple syrup and brown sugar until mixed and bubbling.

    3. Add in pecans and coat. Pour onto prepared baking sheet and separate nuts so they don’t stick together. Let cool.

  2. Make delicious strawberry balsamic salad dressing!

    1. Add strawberries, balsamic vinegar, raw honey, cup olive oil, tsp salt, tsp pepper into blender and blend until smooth.

    2. Place in bowl or dressing dish and set aside for later.

  3. Shave brussel sprouts. (You can always buy pre shaved however they are always a little thicker and I prefer the shavings small to taste more like a salad and less like brussel’s) To shave them I use my Mandoline slicer on 1/8th. If I am not wanting to slice it, I just buy extra bags of pre sliced and pull out all the thick chunks and use for a side of brussels later in the week.

  4. Assemble the salad. I like to put in half of the apples, half the goat cheese and half of the candied pecans add dressing and toss. Once I plate the salad I add a little of each item on the top so you can see the full color and toppings!

  5. Enjoy!
