3 large eggs

3 large egg whites

1 cup heavy whipping cream

2 tablespoons melted butter

3 teaspoon vanilla

1 - 1/2 cup sugar

2-1/4 cups cake flour

1 tablespoon baking powder

3/4 tsp salt

1 cup grated butter

2 cups jumbo blueberries, from Family Tree Farms

1 tablespoon of flour

Filling:

4 cups blueberries, from Family Tree Farms

1 cup granulated white sugar

juice of 2 lemons

Frosting:

1 cup salted butter

2 teaspoon vanilla extract

5 cups powdered sugar

8 oz mascarpone

Instructions:

1. Prep by oiling 3 circle pans (8 or 9 inch) and preheat oven to 350 degrees.

2. Blend together eggs, heavy cream, melted butter, and vanilla completely.

3. Gently fold dry ingredients in a different bowl until combined.

4. Grate 1 cup of butter on top of dry ingredients. Combined by hand until butter is no larger then pea sizes.

5. Next up add in wet ingredients and blend together with hand mixer on medium-high.

6. Once combined put into 3 pans that are oiled and put into oven. 22-27 min or until a toothpick inserted comes out clean. While cake is cooking in the oven take a pot on the stove and add in filling ingredients; blueberries, sugar & lemon juice. Cook, stirring often until blueberries burst and make a beautiful jam.

7. Blend together all frosting ingredients until well combined. (butter and mascarpone should be room temp if not heat in microwave for 30 sec at a time) You can add more heavy cream or powdered sugar depending on desired consistency. I sometimes also double the recipe to a thick layer on the outside.

8. Once cake is done baking let cool in pan for 15 min and transfer to cooling rack to cool completely.

9. Ice layers of cake and do a thin later around for a “crumb layer” that will catch all the crumbs and make a base for the final layer. Place in fridge for 30 min and then do another final layer. Smooth, textured, piped blueberries or fresh, whatever you desire!

Ingredients

1 puff pastry sheet

1/2 cup raspberries

1/2 cup blueberries

Sliced Almonds

Powdered Sugar

2 cups milk

1/2 cup granulated sugar

1/3 cup cornstarch

4 large egg yolks

1 teaspoon almond extract

Instructions

1. Warm milk on stove until hot but not boiling. In a medium bowl whisk egg yolk, granulated sugar and cornstarch until light and fluffy. Add milk slowly being sure no lumps form. Pour back into pan used to heat milk and heat until a continuous boil begins and cream thickens. Make sure it does not stick to the bottom. Reduce heat and continue to cook until it reaches desired thickness. Pour into bowl and cover with plastic wrap placing in fridge to cool completely.

2. Preheat oven to 400 degrees. Let puff pastry warm at room temp until you are able to unroll without cracking. unroll on cookie sheet and cut into 6 individual puff pastries and fold edges over to make crust. Take fork and prick the middle of each pastry that is not folded. This is to help from "puffing" in the middle while baking. Brush side of the crust with egg yolk, milk or water and sprinkle with sugar if you desire.

3. Bake 10-12 minutes until pastry sheet is golden brown. Remove from oven.

4. Take custard from fridge and add to a piping bag or baggie you can cut tip from.Pipe Custard onto each pastry or use a spatula to evenly spread.

5. Add raspberries & blueberries ontop and sprinkle with slices almonds & powdered sugar if desired. Enjoy!

6 cups fresh peaches

1 & 1/2 cups granulated sugar

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

2 teaspoons flour

Topping:

2 & 1/2 cups all-purpose flour

1 cup white sugar

1/2 cup dark brown sugar

2 teaspoons baking powder

1 teaspoon salt

1 cup heavy cream (can substitute for buttermilk)

1 egg

8 tbsp butter

Sugar Topping:

2 tablespoons granulated sugar

1/2 tablespoon cinnamon

Instructions

  1. Preheat oven to 375 degrees

  2. Remove skin from peaches by blanching. To do this you start by placing peaches in boiling water for 30-45 seconds. Immediately take out and place into a bowl of ice water. The peaches will peel perfectly.

  3. Once peaches are peeled slice and toss with sugar in a bowl. Once evenly coated add cinnamon, nutmeg and flour and toss again.

  4. Pour peaches into baking dish and place in oven for 10 min while making topping

  5. Begin Topping by mixing together dry ingredients; all-purpose flour, sugar, brown sugar, baking powder and salt. In another bowl whisk together heavy cream and egg gently pour into flour mixture and hand mix together to make a shaggy mixture that will crumble nicely on top of the peaches.

  6. Once the peaches have cooked for 10 min and the topping mixture is ready crumble evenly over the top of the peach mixture.

  7. Cut 8 tbsp of butter into even size cubes. Sprinkle over top of the crumble mixture so they are evenly spread over the pan. Lastly, Evenly sprinkle sugar topping of sugar and cinnamon over the entire pan.

  8. Place back in the oven and cook for 45-50 minutes, until topping is golden and peaches are tender. Top with fresh whipped cream or vanilla ice cream for a great dessert!
