1 lb Ground Beef

1 tablespoon Salted Butter

1 Yellow Onion diced

2 ribs Celery diced

2 carrots diced

3 cloves Garlic minced

32 oz Beef Bone Broth

2 tablespoons Tomato Paste

1 cup Frozen Peas

1 tablespoon Coconut Aminos

1 teaspoon Thyme, dried

1 teaspoon Salt

1 teaspoon Pepper

For additional creaminess add 1/2 cup heavy cream or buttermilk (optional)

3 cups mashed potatoes

1/2 cup grated cheddar cheese

Fresh parsley

Instructions

1. In a large stockpot (4 or 6 qt) cook ground beef over medium-high heat. Once fully cooked and broken into bite sized pieces drain and strain excess fat. Let sit aside while preparing rest of soup.

2. Add butter to the same empty pot, letting melt. Add in garlic, onion, carrots and celery letting cook until onion is transparent.

3. Add ground beef back into pot with veggies. Add in coconut aminos, thyme, tomato paste, salt and pepper. Letting come together. Once mixed well add in beef broth and let cook for 20-25 minutes until veggies are tender and soup has had time to come to a low simmer. Add in frozen peas the last 5 minutes.

4. Turn off heat and add in heavy cream if you are wanting it creamier. Ladle into soup bowls and add mashed potatoes on-top. (Make these to your liking or use leftovers you might have) now sprinkle cheese on-top.

5. Optional but I like to now put my soup bowl in the stove at 350 for 10 minute or until top of soup has a little browning and cheese is melted (totally optional). Sprinkle with parsley and serve your Shepherds Pie Soup!
