Charred Broccolini with Lemon, Garlic & Parmesan
/Sometimes the simplest dishes are the ones that bring everything together, and this Charred Broccolini with Lemon, Garlic & Parmesan is one of my favorite ways to add something fresh and beautiful to the dinner table.
Tender broccolini is roasted at a high temperature until the edges become slightly crispy and charred, then finished with fresh lemon juice, fragrant garlic, and freshly grated Parmesan cheese.
It's simple, flavorful, and the perfect addition to a holiday dinner menu.
I'm serving this alongside my Peppercorn-Crusted Beef Tenderloin with Blackberry Cabernet Sauce and Brown Butter Mashed Potatoes with Roasted Garlic & Fresh Thyme for our holiday dinner with JUSTIN Winery. I love how the bright lemon and slightly charred broccolini balance the richness of the beef and creamy potatoes.
And the best part? It comes together in less than 25 minutes.

How to Make Charred Broccolini with Lemon, Garlic & Parmesan
Ingredients
2 bunches broccolini (approximately 1 pound)
2 tablespoons extra virgin olive oil
3 garlic cloves, finely minced
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
Zest of 1 lemon
1 tablespoon freshly squeezed lemon juice
¼ cup freshly grated Parmesan cheese
¼ teaspoon red pepper flakes (optional)
Lemon wedges, for serving
Step 1: Prepare the Broccolini
Preheat your oven to 450°F.
Wash the broccolini and pat completely dry with a clean kitchen towel or paper towels.
Trim approximately ½ inch from the ends of the stalks. If any stems are particularly thick, slice them lengthwise so everything cooks evenly.
Step 2: Season
Arrange the broccolini in a single layer on a large baking sheet.
Drizzle with olive oil and sprinkle with sea salt and freshly ground black pepper.
Toss until evenly coated, making sure the broccolini isn't overcrowded.
Step 3: Roast Until Charred
Place the baking sheet in the preheated oven and roast for 8–10 minutes.
Remove from the oven, sprinkle the minced garlic over the broccolini, and toss gently.
Return to the oven for another 3–5 minutes, until the stalks are tender and the florets have developed lightly charred, crispy edges.
Adding the garlic toward the end helps prevent it from burning.
Step 4: Finish with Lemon & Parmesan
Transfer the roasted broccolini to a serving platter.
While still warm, sprinkle with fresh lemon zest and drizzle with lemon juice.
Finish with freshly grated Parmesan cheese and red pepper flakes, if using.
Add a few lemon wedges to the platter and serve immediately.
Amanda's Tips for Perfectly Charred Broccolini
Use high heat. Roasting at 450°F helps develop the beautiful charred edges without overcooking the stalks.
Dry thoroughly. Excess moisture can cause the broccolini to steam instead of roast.
Don't overcrowd the pan. Give the broccolini plenty of space so it can caramelize.
Add garlic toward the end. Garlic can burn quickly at high temperatures, so adding it during the final few minutes keeps the flavor delicious.
Finish with fresh lemon. Adding the juice after roasting preserves its bright flavor.
Serve immediately. Broccolini tastes best straight from the oven while the edges are still slightly crisp.

Frequently Asked Questions
What's the difference between broccolini and broccoli?
Broccolini has longer, thinner stems and smaller florets than traditional broccoli. It has a tender texture and slightly sweeter, milder flavor.
Can I make charred broccolini ahead of time?
You can wash, dry, and trim the broccolini a day ahead. For the best texture, roast it just before serving.
Can I make this recipe without Parmesan?
Absolutely! Simply omit the Parmesan for a dairy-free version. The lemon and garlic provide plenty of flavor on their own.
Can I cook broccolini in a skillet instead?
Yes. Heat olive oil in a large skillet over medium-high heat and cook the broccolini for approximately 6–10 minutes, turning occasionally. Add the garlic near the end, then finish with lemon and Parmesan.
How do I store leftovers?
Refrigerate leftover broccolini in an airtight container for up to 3–4 days. Reheat in a hot skillet or oven to help restore its texture.
