Ingredients
Serves 8-10
8 ground sausage
2 pounds red potatoes
3 cups chopped spinach
1 large onion
12 eggs
Olive Oil
Salt & Pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup Colby Jack cheese
10 large burrito size tortillas
Instructions
1. Start by placing a large skillet over medium heat. Prep potatoes by cutting into small, diced bite size pieces. The smaller the potato the crispier they get and the crispier the better! Add a tablespoon of olive oil to heated pan and coat bottom. Add in potatoes, diced onion and season with sea salt, black pepper, garlic powder and onion. Toss potatoes around in olive oil and seasoning. Add additional olive oil if needed. Let sit so this side of potatoes will get crispy. Check on them every 5 minutes.
2. While potatoes cook take a medium size skillet over medium heat. Once your pan is heated add 1 tablespoon of olive oil to pan and add in your ground sausage. Cooking and breaking up into bits. Once fully cooked add to the pan with potatoes.
3. Mix into spinach and stir together. Once everything comes together and spinach is softened pour over whisked eggs and cook together until eggs are fully cooked.
4. Prep your burritos by laying out tortillas and shredding cheese in the middle of each. Add 1 cup of the potato & sausage mixture ontop of shredded cheese. Roll tortillas into burritos and heat on both sides in a small pan over medium head until slightly crispy. Remove from pan and let cool. Roll in parchment paper and place in ziplock bag place in freezer or fridge until ready to reheat and enjoy!
