4 pounds boneless, skinless chicken breasts
2 tablespoons olive oil
1 white onion, diced
2 (8-ounce) blocks cream cheese
2 cans black beans, rinsed and drained
1 can enchilada sauce
4 cups Mexican-style shredded cheese, divided
2 tablespoons taco seasoning
Tortilla chips, tortillas, or fresh vegetables, for serving
Optional toppings such as cilantro, green onions, jalapeños, tomatoes, avocado, sour cream, or olives
Instructions
Step 1: Prepare the Onion
Add the olive oil and diced onion to a skillet or the stovetop-safe insert of your slow cooker.
Cook over medium heat for a few minutes, until the onion begins to soften.
Step 2: Add the Chicken
Place the chicken breasts into the slow cooker with the softened onion.
Sprinkle the taco seasoning over the chicken.
Step 3: Add the Remaining Ingredients
Add the cream cheese, drained black beans, enchilada sauce, and 3 cups of the shredded cheese.
Cover with the lid.
Step 4: Slow Cook
Cook for approximately 2–3 hours, or until the chicken reaches 165°F internally and is tender enough to easily shred.
Because slow cookers vary, use the chicken's temperature and tenderness rather than the clock alone to determine when it's finished.
Step 5: Shred the Chicken
Remove the cooked chicken breasts and shred them using two forks.
Return the shredded chicken to the slow cooker and stir thoroughly so the chicken, cream cheese, beans, enchilada sauce, and melted cheese are evenly combined.
Step 6: Finish with Cheese
Sprinkle the remaining 1 cup shredded cheese over the top.
Replace the lid briefly and allow the cheese to melt.

Don't overcook the chicken.
Once it reaches 165°F and shreds easily, it's ready.
Cut the cream cheese into smaller pieces.
This helps it melt more evenly throughout the dip.
Drain and rinse your black beans.
You don't want the extra liquid from the cans thinning out your dip.
Save one cup of cheese for the top.
That final layer gives you the beautiful melted-cheese finish.
Shred the chicken before the final stir.
Once returned to the slow cooker, the shredded chicken will soak up all that creamy enchilada flavor.
Keep it warm for serving.
After everything is cooked, switch the slow cooker to its warm setting if your model has one.
