Ingredients

Serves 8-10

8 Chorizo Links, casing taken off

2 pounds red potatoes

12 eggs

Olive Oil

Salt & Pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup mozzarella cheese

Avocado



Instructions

1. Start by placing a large skillet over medium heat. Prep potatoes by cutting into small, diced bite size pieces. The smaller the potato the crispier they get and the crispier the better! Add a tablespoon of olive oil to heated pan and coat bottom. Add in potatoes and season with sea salt, black pepper, garlic powder and onion. Toss potatoes around in olive oil and seasoning. Add additional olive oil if needed. Let sit so this side of potatoes will get crispy. Check on them every 5 minutes.

2. While potatoes cook take a medium size skillet over medium heat. Once your pan is heated add 1 tablespoon of olive oil to pan and add in your chorizo. Cooking and breaking up into bits. Once fully cooked add to a paper towel lined plate.

3. Cooking the eggs. Whisk together eggs in a large bowl and add to the already hot and oiled chorizo pan. Using the same pan adds the flavor of chorizo to eggs. You can also add in salt and pepper to taste. Stirring and cooking your eggs until light and fluffy and no runny yolk.

4. Prep your bowls by stacking. Potatoes on the bottom, chorizo and then eggs. Finally top off with your shredded cheese and avocado slices or toppings of choice. Serve and Enjoy!

Tip: If you are making these for meal prep you will still layer this way into glass containers. Then you can reheat in the oven to keep the crispy consistency. Add avocado and toppings later.
