Ingredients
1 baked sweet potato
1 tablespoon of salted butter
3-4 oz of slow cooker shredded chicken
1/4 cup of your favorite bbq sauce
Coleslaw mix (I used one from the store for an easy meal but you can make this yourself too)
The Mexican Sweet Potato
Ingredients
1 baked sweet potato
1 tablespoon of salted butter
3-4 oz of slow cooker shredded chicken
1/4 cup corn
1/4 of an avocado, sliced or diced
1 or 2 tablespoons of sour cream
1 teaspoon taco seasoning
2 tablespoons monterey jack cheese
2 tablespoons finely chopped red onion
Chili Loaded Sweet Potato
Ingredients
1 baked sweet potato
1 tablespoon salted butter
1/2 cup chili
1 jalapeno sliced
1/4 cup cheddar cheese
2 tablespoons sour cream
Instructions
1. Preheat oven to 400. Scrub clean all sweet potatoes (above ingredients are per sweet potato but can be doubled, tripled etc. to make more). Pearce sweet potatoes with a fork all around and place on a parchment paper lined baking sheet. Bake in the oven for 1 hour. Turning every 20 minutes.
2. Once cooked Remove from oven and let cook slightly. Slice potatoes lengthwise down the middle and add in 1 tablespoon of butter. Smash with fork and mixing in butter to sweet potatoes.
