Ingredients
12 oz bacon
3 cloves garlic, minced
1 (15 oz) can kidney beans
1 (15 oz) can northern white beans
1 (15 oz) can pinto beans
1 yellow onion, diced
1/4 cup coconut aminos
1/2 cup ketchup
1/4 cup molasses
1/2 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/2 cup dark brown sugar
Instructions
1. Cook the Bacon
Using a 4-quart slow cooker insert or large skillet over medium heat, cook the bacon until crispy. Remove the bacon and set aside on a paper towel-lined plate.
2. Sauté the Onion
Add the diced onion to the bacon grease and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
3. Chop the Bacon
While the onions cook, roughly chop the cooked bacon into bite-sized pieces.
4. Combine Ingredients
Add the chopped bacon back into the pan along with the kidney beans, northern beans, pinto beans, coconut aminos, ketchup, molasses, mustard, Worcestershire sauce, and brown sugar. Stir until everything is fully combined.
5. Slow Cook
Transfer the mixture to the slow cooker base and cook on low for 5–7 hours until thick, rich, and flavorful.
