Ingredients
1 tablespoons salted butter
1 large onion, finely chopped
3 cloves of garlic, minced
16 oz mushrooms, sliced
4 large carrots, cut into bite sized pieces
1/2 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon sea salt
1/2 teaspoon black pepper
2 bay leaves
8 cups vegetable broth
2 lbs boneless skinless chicken breast
2 cups couscous
1 cup heavy cream
Instructions
1. Melt butter in large pan (if using a slow cooker like mine you can remove from base and use on stove). Add in finely chopped onion and garlic, cooking until onion is transparent. Add in mushrooms, carrots and seasoning. Stir until all vegetables are coated.
2. Layer your chicken on top and add vegetable broth. Return pan to base. If you are using a slow cooker that you would need to cook part 1 in a different pan you will add to pan then layer chicken and add broth.
3. Let cook in slow cooker for 4-5 hours on high or until chicken will shred. Remove chicken from slow cooker, shred and return back. Add in couscous and cook for 1 hour, stirring every 15-20 minutes. Before serving pour in heavy cream. Serve and Enjoy!
