Instead of baking it into a dessert, I wanted to translate those same flavors into a drink using smooth, low-acid Lifeboost Coffee, a brown sugar cobbler espresso base, and a thick cherry syrup that tastes like pie filling over ice.

Ingredients
Cherry Cobbler Syrup
1 cup cherries, fresh or frozen and pitted
1/3 cup brown sugar
1/2 cup water
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
Pinch of cinnamon
Brown Sugar Cobbler Espresso
1 to 2 shots espresso or strong Lifeboost Coffee
1 to 2 teaspoons brown sugar
1/4 teaspoon vanilla bean
Pinch of cinnamon and salt
Latte
1 cup milk of choice
Ice
1 to 2 tablespoons cherry syrup
Prepared espresso mixture
Instructions
Make the cherry syrup by simmering cherries, brown sugar, and water for 8 to 10 minutes. Add vanilla and cinnamon, then cool completely.
Brew espresso or strong coffee. Stir in brown sugar, vanilla, cinnamon, and salt while hot to create the cobbler base.
Fill a glass with ice and cherry syrup.
Add milk.
Slowly pour the cobbler espresso over the top.
Stir or serve layered.
